Navigate to System Settings > Privacy & Security > Profiles to approve the profile. Click on the Profiles menu and select the downloaded profile: Once you click on the profile, a new pane will appear and prompt you to Enroll or Ignore the MDM enrollment profile.

University Macs need their Mobile Device Management Profile approved physically at the machine. Once approved, this enables access to several further useful elements of the supported desktop, including the Self Service portal.

No, Apple only allows a single MDM Profile. The only thing that could be considered a caveat to that would be JAMF+Intune co management. Intune is a MDM platform in its own right, but with the Intune integration JAMF is doing all the MDM stuff and reporting data to Azure.

MDM profile does not expires, the jamf built-in certificate does, and when it happens, simply the school MDM will not be able to communicate with your laptop. There will be no data or access related issue happens.

As for screen monitoring, it will need permission to access camera and is often used in unattended devices. Other details that an MDM can monitor on devices: available storage, battery temperature, permission condition, external HDMI/SD card status, etc.

If you have access to the MDM profile, you can try removing it by going to Settings > General > Device Management > [MDM profile] > Remove Management. You may need to enter a passcode or confirm your decision to remove the profile.
