    PALEO ZUCCHINI FRITTERS𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:4 large zucchini, grated1 tsp salt1 egg, beaten1/2 tsp pepper1/2 tsp baking soda1/4 tsp chili powder1/4 cup coconut flourCoconut oil, for cooking𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬:1. Place the shredded zucchini in a colander and sprinkle with salt. Toss well and let the zucchini drain for 10 minutes.2. Squeeze any excess moisture out of the zucchini either with a dish towel or using your hands. Place in a large bowl. Mix in the egg, pepper, cayenne, baking soda, and coconut flour.3. Melt the coconut oil in a large skillet over low heat. Form about 1/4 cup of the zucchini mixture into a patty and place in the pan. Cook on each side for 4-5 minutes until lightly browned. Repeat with remaining zucchini mixture, adding more coconut oil to the pan for each patty.     How about a healthy dish for tonight? Sweet potato nachos.Ingredients3 medium sweet potatos (about 2lbs) makes about 6 cups of rounts1 Tbsp. olive oil1 tsp. chili powder1 tsp. garlic powder1 1/2 tsp. paprika1/3 cup black beans (drained, rinsed)1/3 cup reduced-fat, shredded cheddar cheese1/3 cup no-salt-added,canned, diced, tomatoes *drained, rinsed)1/3 cup chopped avocadoDirectionsPreheat the oven to 425 degrees. Cover the baking pans with foil and coat with nonstick cooking spray.Peel and slice the sweet potatoes thinly (about quarter-inch rounds). In a bowl toss the rounds with olive oil, chili powder, garlic powder and paprika. Spread evenly on prepared pan (might need two pans). Bake for 10 minutes and use a spatula to flip the sweet potato rounds. Bake for another 5-10 minutes or until crisp. Remove the pan from the oven and sprinkle beans and cheese over the sweet potatoes. Return to oven until cheese melts, about 2 minutes. Sprinkle with tomato and avocado.     Even if your #wfh I still think meal prepping is one of the best tools you can use to keep energy high, consume nutrient quality meals consistently and save you time across the day ⏱️By meal prepping for a few days across the week it can save you up to 1-2 hours a day of cooking & cleaning, that’s nearly 10 hours across the week that you’ll get BACK by just spending some time of your Sunday & Wednesday evenings (my preferred meal prep days) to prep out meals for the next 3 days 🥣I’m not one for fancy meal or lots of ingredients, I like to keep things simple ✅Decide on the carb source; rice, pasta, potatoes, couscous Protein source; chicken, mince, turkey, fish, eggsFat source; cheese, avocado, nuts / seeds, oils you cook with etc& lots of fruit & veggies included, that you can swap around in meals to help with variety 🌈Do you meal prep for the week ahead? 🥗#mealprep #officejob #corporatewellness #officejob

    Breakfast of Champions: Crisp Eggless Waffles for a Healthy Start! Eggless Atta Waffles 🧇🌿Ingredients:* 1 cup whole wheat flour (atta) 🌾* 1 cup oats* 1 teaspoon baking powder* ¼ teaspoon salt* 1½ cups milk (dairy or any unsweetened plant-based milk)* 2 tablespoons olive oil* 1 tablespoon maple syrup or honey (optional, for sweetness) 🍯Instructions:1. In a large bowl, combine the 🌾 atta, baking powder, and salt.2. Add the milk, oil, maple syrup (if using) to the dry ingredients.     ⚡️ For any friends still experiencing power issues, here's some valuable food options to stock up on for now and in the future:🥫 Canned Meats: Sardines, tuna, Vienna sausage, corned beef, canned chicken, and spam. These provide protein and can be eaten straight from the can.🍛 Canned Beans and Vegetables: Baked beans, chickpeas, and canned veggies can be eaten cold or mixed for a nutritious meal.🍲 Canned Soups and Stews: These can be eaten cold if necessary, though heating them is preferable if you have a safe method.🥜 Peanut Butter, Jelly, Applesauce : Easy to store, don’t require refrigeration, and can be paired with bread or crackers for a simple meal.🍜 Instant Noodles and Soups: If you have access to boiling water, these can be a comforting meal.💧 Water plenty of water, always drink mostly water, always stay hydrated.It's always good to have a can opener in your kitchen to safely open these type of food items. 🥫🔧
