Fall is a favorite time of year because cinnamon smells so good when it’s baked, which is why this Cinnamon Cookies Recipe is always a hit!

Cinnamon is such a popular spice and is used in many types of desserts because it makes them really tasty. In fact, cinnamon cookies are my favorite type of cookie!

I love to bake cinnamon cookies – especially this time of year. So warm and inviting – the family can’t wait for these cookies to even cool down before they are devouring them one by one.

What I really love about these cookies is that they are a no-chill recipe. Most of the time I don’t plan ahead – so when I get it in my mind that I want cookies – waiting for chill time ruins the plan.

These cinnamon cookies are soft with a tender crumble. Not chewy but more like the texture of a shortbread of Biscoff cookie. The crushed walnuts that are mixed in give an earthy depth without having an overpowering walnut flavor.

It complements the cinnamon perfectly. They are the epitome of fall.

Can these cookies be made ahead of time?

You bet. This cookie dough can be made ahead of time and kept in the refrigerator for up to 4 days prior to baking. You may need to let it sit out at room temperature for about 20-30 minutes before rolling, cutting, and baking.

How many cookies does this make?

This recipe makes about 30-38 cookies but this will depend on how large or small you make them. With these large cookie cutters, it may be a few less.

What do you mean by soft butter?

You will need to take your butter out of the fridge about an hour before you would like to bake the cookies for the butter to soften but not get too soft.

  • butter– slightly softened but still cool
  • brown sugar
  • all-purpose flour
  • finely chopped walnuts
  • vanilla extract
  • ground cinnamon

How to Make This Cinnamon Cookies Recipe

  1. Preheat the oven to 350 degrees and line two baking trays with parchment paper.
  2. In a stand mixer, using a paddle, beat the butter and brown sugar together.
  3. Then mix in the flour, chopped walnuts, vanilla, cinnamon, and baking powder.
  4. Once the paddle has pulled in all of the dough, take the dough out and roll it on a lightly floured surface. Make sure it’s ¼ inch thick, and evenly spread.
  5. Cut out your cookies in the desired shape and place them on the prepared baking trays. Repeat with the remaining dough.
  6. Bake for 15 – 20 minutes until the edges are a bit golden.
  7. Meanwhile combine your granulated sugar with one tablespoon of cinnamon.
  8. Once your cookies are ready, remove them from the oven. While they are still hot, dredge them in the sugar mixture – coating them completely.
  9. Let cool completely before serving.

Can I use a sugar substitute?

I have not personally tried it, so I can’t say how that would turn out. But if you would like to try it, I suggest a product that offers a 1:1 swap. Please let me know how it turns out.

What other ingredients can I add to these cookies?

Some popular ingredients to add include finely chopped raisins, dried cranberries, or dates that can be folded into the dough. You can also add chocolate chips or cinnamon chips to the tops of the cookies after they have been rolled and cut but before baking.

Should I use salted or unsalted butter?

When making a traditional cut-out cookie recipe like this one where the base is butter, I like to keep the butter unsalted.

Please do not use margarine with this recipe. Real butter only.

Can I use cinnamon substitutes instead of cinnamon?

Substitutes include cardamom, cloves, ginger powder, and pumpkin spice mix. Some people even substitute apple pie spice, which contains cinnamon and nutmeg.

How do I properly measure the flour?

The official way is to spoon the flour into the measuring cup & level off. This makes sure the flour isn’t packed tightly into your measuring cup, adding more than you need, as that will make your recipe too dry.

However – if you fluff your flour with a spoon, then gently scoop the flour into the measuring cup, taking care to not pack the flour – that should work for this recipe.

Tips for the best cinnamon cookies

  • use real butter – no margarine here
  • avoid over-baking as this will dry out the cookies and make them brittle
  • make sure the butter isn’t too soft – this will make the dough too soft and the cookies will spread too much when baking.
  • avoid freezing as this will allow cool, moist air to ruin the coating.
  • omit the cinnamon and sugar coating and add an icing glaze instead if desired.

Tips, Tricks, Suggestions

  • If you have a period of time where you are not actively working the dough for this easy recipe, be sure to wrap it in plastic wrap to keep it soft.
  • The cinnamon sugar mixture is similar to what you would use when making Snickerdoodle cookies and can be changed up if you want it to have more cinnamon flavor or more sugar flavor.
  • ​No need for a cookie scoop when making these chewy cookies.
  • Be sure to use a cool cookie sheet for your dough so the cookies don’t bake unevenly.
  • When using an electric mixer with a paddle attachment or a hand mixer, be sure to mix at a medium speed for the wet ingredients and reduce to low speed when mixing in the dry ingredients/flour mixture.
  • I like to add a little bit more of the cinnamon-sugar mixture on top of these easy cookies when they come out of the oven.
  • Try adding a little cream cheese frosting to the tops of this cinnamon cookie recipe to make them taste like cinnamon roll cookies.
  • Be sure to let the baked cookies cool on a wire rack when they are done baking.

  • ¾ cup brown sugar
  • cups all-purpose flour
  • 1 cup walnuts finely chopped
  • 1 teaspoon vanilla extract

  • ½ tsp baking powder
